I really love that I get to enjoy morning pancakes with out the shame and guilt. I create recipes that give me more energy and vitality through out my day. I think that they taste great too! I have been making this one for about 5 years now.
These pancakes are made with Otto’s Cassava Flour and taste just like regular pancakes to me. They are fluffy, light and so tasty.
Prep Time: 7 Minutes
Cook Time: 10 minutes
Serves: 2 People
Ingredients:
1 cup Organic Cassava Flour (I like Otto brand the best)
4 Teaspoons Baking Powder (aluminum free please)
1/2 Teaspoon Celtic Sea Salt
1 3/4 Cups Elmhurst 1925 Nut Milk (Walnut, Cashew, Hazelnut or Oat)
2 Tablespoons of Oil. (I like walnut or pecan oil)
1 Organic Egg
Nutrient Dense Pancake Options:
Option 1: 1 Tablespoon of SunWarrior Protein Powder (Keto Friendly)
Option 2: 1/2 Cup Hemp Hearts, 1/4 Cup Chia Seeds 1/4 Cup Flax Seed
Lemon Infused Butter/Ghee
2 drops doTERRA Lemon Essential Oil (this is added to your melted butter)
3 Tablespoons of Butter or Ghee
Optional Toppings:
Organic Berries, Mangos, Pineapple, Walnuts and Pecans. Organic Maple Syrup, Melted butter with a few drops of doTERRA Lemon Essential Oil
Instructions:
Add the dry ingredients to a stainless steel or glass mixing bowl
Mix the wet ingredients in a separate stainless steel or glass mixing bowl
Blend the dry and wet ingredients and stir or whisk.
Allow the pancake batter to sit for 10 – 20 minutes
Heat up a ceramic frying pan over medium heat and add a touch of butter or coconut oil
Pour about 1/4 cup of the batter into the heated pan. Cook for 2 – 3 minutes each side.
Your Gluten Free Supercharged Pancakes are ready to enjoy. Top them off with the lemon infused melted butter or Ghee, and/or your favorite berries or fruit.
